The titratable acidity of the examined goat's milk samples as one of the keeping quality tests fluctuated between 0.09 and 0.26 with a mean value of 0.15 ± 0.01%. Concerning the microbiological results of the evaluated samples, it was found that the average counts for aerobic plate, coliforms, fecal coliforms, enterococci, S. aureus and yeasts & molds were as follow 1.3 x 106, 3.8 x 105, 1.7 x 102, 1.6 x 103, 1.8 x 103 and 1.9 x 103 cells/ ml, respectively. The public health importance of the counted organisms and the prophylactic measures to improve the quality of dairy farm milk were discussed.
