Evaluating the effects of certain probiotics on mycotic contamination in oriental sausage

Abstract

Probiotics are natural antimicrobial agents. It has great beneficial effects to human. In this study, Probiotics as (Lactobacillus casei, Lactobacillus delbrueckii, Bifidobacteriumlactis) were used in oriental sausage to reduce total mould and yeast counts and Aspergillus flavus count.
Tow oriental sausage groups were used. The 1st group was used to evaluate reduction %of total mould and yeast count. It was subdivided to 4 groups 3 were inoculated with different Probiotic strains, the 4th was control. Results showed that total mould and yeast count (cfu/g) reduced to (4.73x103±2.33x102, 6.97x103± 2.73x102 and8.80x103 ± 2.08x102) using Lactobacillus casei, Lactobacillus delbrueckii and Bifidobacterium lactis after 12days inducing reduction % of (91.66, 87.71 and 84.48) respectively.
The 2nd group was used to evaluate reduction %of Aspergillus flavus count. It was inoculated with Aspergillus Flavus then subdivided to 4 groups 3 were inoculated with different Probiotic strains, the 4th was control. Results showed that Aspergillus Flavus count (cfu/g) reduced to (2.97x104±1.86x103, 5.37x104±1.45x103and 6.34x104± 1.45x103) using Lactobacillus casei, Lactobacillus delbrueckii and Bifidobacterium lactis after 12days inducing reduction % of (92.25, 85.98 and 83.45) respectively.
Moreover it was found that Lactobacillus casei was the most effective Probiotics causing the highest reduction% in total mould count and Aspergillus Flavus count followed by lactobacillus delbrueckii then pidfedobacterium lactis.
