Determination of water soluble vitamins in Egyptian Honey by RP-HPLC

Abstract

The purpose of this study is to evaluate water soluble vitamins (C, B1, B2, B3, B6, B9 and B12) in honey from honey bees feed on Spring flowers, Sweet marjoram, Sun flower, Clover flowers, Citrus fruits and Black seed using gradient RP-HPLC methods with PDA detector. The highest levels of vitamins C, B1, B2, and B6 were observed in citrus fruits honey, sunflower honey, black seed honey and spring flower honey, respectively. The highest levels in vitamins B3, B9 and B12 were observed in sweet marjoram honey, where the lowest levels for these vitamins were observed in clover flower honey. The lowest levels for vitamins B2 and B9 were observed in black seed honey. The lowest levels for vitamins C and B1 were observed in spring flower honey and citrus fruits, respectively. These results indicated the presence of a significant difference in water soluble vitamins content depending on the type of Egyptian honey.
