EVALUATION OF MICROBIOLOGICAL QUALITY OF SOME STREET FOODS

Abstract

Forty five street food samples collected from local market of Ashmoun city, Minufiya Governerate Egypt analyzed to enumerate the total bacterial counts (T.B.C) and mold & yeast as well as pathogenic bacteria such as Salmonella spp, E.coli, Staphylococcus aureus and Bacillus cereus. The obtained results indicated that all examined samples had a highly content of microorganisms. The results showed that potato puree sandwiches had the highest counts of  T.B.C, Staph.aureus and B.cereus compared with medamis and taamia sandwiches (with or without salad). The value counts of microorganisms on potato puree sandwiches were 2.4x105, 2.8x x105,, 2.8 x104, 17.5 x104 and 8 x105 c.f.u/g in T.B.C, mold & yeast, E.coli, Staphylococcus aureus and B. cereus respectively. Koshary with sauce had higher values counts than koshary without sauce in all investigated microorganisms. Grilled kofta sandwiches also showed the highest value counts of organisms among all investigated meat products sandwiches in all investigated organisms, meanwhile Salmonella  wes detected in hawawshi loaf and grilled kofta. E.coli and Staphylococcus aureus were no detected in both of boiled eggs and omelet. Salmonella did not detected in omelet sandwiches whereas B. cereus did not detected in boiled eggs.
