This study focused on assessment of the microbiological quality, including the incidence of pathogens,
of commercial raw cow's and buffalo's milk in Menoufia Governorate, Egypt. A total of 70 (35 each)
milk samples were collected from different sites and analyzed for microbiological quality and isolation
of pathogenic bacteria. Microbiological analysis revealed that the mean aerobic plate count
was 2.01±0.836×10⁷ and 4.03±1.37×10⁷ cfu/ml for cow's and buffalo's milk,
respectively. Enterobacteriaceae were detected in 31 (88.57%) and 31 (88.57%), with mean
count values of 2.22±0.92×10⁶ and 1.03±0.267×10⁷ cfu/ml in cow's and buffalo's milk
samples, respectively. Coliforms were detected in 88.57% and 88.57%, with mean count values
of 5.57±3.56×10⁵ and 8.86±1.71×10⁵ cfu/ml in cow's and buffalo's milk samples, respectively. E.
coli was detected in 8 (22.9%) and 5 (14.3%), S. aureus was detected in 22 (62.86%) and 20 (57.14%),
with mean count values of 5.69±1.97×10⁴ and 1.58±0.50×10⁵ cfu/ml in cow's and buffalo's milk,
respectively. On the other hand, Salmonella and L. monocytogenes were not detected in the examined samples.
