Abstract

There has been a high level of attention given to supplementation of Labneh with probiotic bacteria and papaya's pulp fibers powder (PPFP) as a prebiotic. This is because PPFP is a source of dietary fibers and bioactive compounds for enhancing its nutritional and therapeutic functions of labneh. Labneh was manufactured using different amounts of papaya´s pulp fibers powder. 0%, 0.5%, 1%, 1.5%, 2%, 2.5% and 3 % along with 15% papaya juice. All treatments were stored in the refrigerator for 28 days and samples were when taken different time points: when Fresh, and at 7, 14, 21, and 28 days of storage. The samples were then evaluated for their chemical, microbiological, and organoleptic attributes. The results showed that supplementing labneh with PPFP led to a significant increase of the counts of total bacteria, streptococci, lactobacilli, bifidobacteria. It is also increased titratable acidity total solid content, ash content, total phenolic content and antioxidant activity. This increase was proportional to the rate of supplementation helped prevent the growth of mold and yeast, However, adding PPFP to labneh did not have a significant effect on the protein and fat content of the resulting labneh treatments. As the storage period progressed, there were no significant differences in the total solids, fat content, and total protein of all labneh treatments, However, the pH, carbohydrate content, total phenolic compound content, and antioxidant activity decreased, while titratable acidity and ash content increased during storage.
