This study aims at determining the approaches and the attributes of selecting the employees for the hotels sector in addition to stating the causes for the high turnover in some sections through comparing samples of four-star and five-star hotels in both Egypt and Jordan. Questionnaires were used as a method for collecting the required data concerning the specification which the employees are chosen according to, the different ways of job advertisements, the appeal and the repulsion of employees to work in certain hotel departments, and the reasons of the high turnover in specific hotel sections. Most results which were based on statistical analysis showed significant differences between the Egyptian and the Jordanian hotels regarding the priorities of the criteria for selecting the employees. As the certifications ranked higher importance in the Egyptian hotels than in the Jordanian hotels where they had more concern on the excellence of foreign languages. It was also detected that the high turnover is due to the lack of the promotion opportunities&inadequate of work environment regarding health and safety. The study perceived some influential challenges on the hotel work and suggestions to overcome them through developing the training methods, evaluation and cooperation with the academic identities.
