The study investigated the impact of Arabic gum, artichoke leaves, and their combinations on rats with renal failure. Rats were divided into groups, with some receiving different concentrations of Arabic gum, artichoke leaves, or their combination in their diet. Results showed that glycerol-induced renal failure caused a drop in body weight, serum protein, and antioxidant enzyme levels, while increasing kidney and liver dysfunction markers. Treatment with Arabic gum, artichoke leaves, or their combination improved these parameters, with the best outcomes observed in rats receiving both high and low levels of the combined treatment. Histopathological analysis supported these findings, suggesting that Arabic gum and artichoke leaves help alleviate renal failure symptoms. At the end of the biological experiment, seven samples of crepe were prepared., incorporating 2.5% and 5% Arabic gum, 2.5% and 5% artichoke leaves, and combinations of 2.5% and 5% of both ingredients, all treatments were found to be palatable in the sensory evaluation.
