BACTERIOLOGICAL STUDIES ON ENTEROBACTERIACEAE IN SOME MEAT PRODUCTS

Abstract

A total of 80 random samples of meat products (40 minced meat, 20 lunchon and 20 basterma) were examined bacteriologic ally for Enterobacteriaceae. The mean value of total enterobac teriaceae count were 42.9x10', 72.5x 102 and 36.8x 10/gm in the samples of locally manufactured raw minced meat, lunchon and basterma respectively. Members of contaminated Enterobacteriaceae could be detected in the examined meat products which included "Escherichia coli, Klebsiella, Enterobact er, Citrobacter., Alkalescens dispar, Proteus and Hafnia respectiv ely.
