Lipolytic and proteolytic activities of psedomonas spp isolated from table butter

Abstract

TwentY five samples of table better were collected randomly in their retail containers fro different localilles in El-Dukahlia Covernorate. Egypt. Collected samples were examined bacteriologically for occurrence and behavior of Pseudomonas organisms. Pseudomonas spp. Was isolated only from 5{20%) of25 table butter samples, with. A count ranged from 2x10 to 2.4x104 cfumt.
The incidence of Pseudomonas organisms isolated from table burter samples using Pseudomonas selective medium {PSM} was Ps. fragi (I0%). Ps, jluorescens (6%) and Ps. aeruginosa (2%).
The proteolytic activity of isolated Pseudomonanas spp on skim milk agar plates proved that all tested Ps. fragi (5) and Ps. Fluorescens (3) and Ps, ueruyinosa (1) pro duced proteolytic octivfty (100%).
Lipolytic properl1ies of isolated Pseudomonas spp from tuble butter proved that all tested Ps. fragt (5) and Ps. flunrescens (3) produced Npolytic actiivity , On the other hand Ps. Aeruginoso fa1ed to produce lipase enzyme.
The public health and economic imporlance of isolated Pseudomonas spp as well as
suggested control measuresfor tmproving the quatuy of the product were discussed.
