This study was conducted to determine the possible protective effect of Pimpinella anisum oil on the histopathological changes in the liver and kidney of male albino rats with long term intake of aspartame, the most widely used artificial sweetener. Twenty adult male albino rats were divided equally into four groups. The 1^st group served as "control group", the 2^nd group received Pimpinella anisum oil for two months, the 3^rd group received aspartame for two months, while the 4^th group received aspartame plus Pimpinella anisum oil for two months. Liver and kidney specimens were processed for histopathological, histochemical and immunohistochemical studies. Histological results revealed extensive vacuolar degeneration of hepatocytes and congested sinusoids in the liver of aspatame-treated group. In addition, the kidney showed shrunken and atrophied glomeruli, dilated collecting tubules and inflammatory cells were observed. Moreover, some tubules appeared with vacuolated cytoplasm and other with pyknotic nuclei. Treatment with Pimpinella anisum oil resulted in obvious improvement of different structures of the liver and kidney. The aspartame plus Pimpinella anisum oil treated group showed amelioration of these changes which are most likely attributed to the antioxidant effects of Pimpinella anisum oil.
