Potato is considered one of the most important vegetable crops in Egypt because potato use as a food crop and the manufacturing of some food industries, the government makes great efforts in order to develop and increase agriculture production to take pace with world rate production, the Egyptian agriculture policy does her best to increase the product of Egyptian crops, especially food stuffs, to face the increasing need of population and the increasing agriculture exports to save hard currency. So this research primary aims to study the gap between production, consumption, and self-efficiency to promotes and develops Egypt's potato exports, and search for new market windows to absorb the excess production of potato. For this purpose, each of Potato cultivated area, potato productivity, production, consumption, surplus production, self-sufficiency, lost potato, average per capita were used during the study period (1998-2012)
The result indicated that the production of Potato was about 2815 thousand ton and tends to increase by 203 thousand ton annually during the period (1998 -2012) the consumption of it during the same period was about 1774 thousand ton self-sufficient was about 157%, this means there is a surplus in production than the local consumption, in the same time increasing the export from it to increase the hard currency in one hand and facing the needs of developing the projects of agriculture.
